Sandbach Nub News has joined forces with a regular reader to share a 'Cocktail of the Week' feature, including classics, reinventions of familiar favourites and some crazy concoctions unique to Nub News.

Nicer than it sounds, this week's creation from our cocktail-mad contributor, Josh, is a juxtaposition if ever we saw one: Martini-inspired ingredients and a colour that can only be described as 'Shrek Chic!' 

Ingredients: 

  • 25ml vodka
  • 25ml blue curaçao
  • 50ml pineapple juice
  • egg white or aqua faba (chickpea juice and a great vegan alternative)

Method:

  1. put all of your liquid ingredients into a shaker
  2. add the egg white or aqua faba
  3. shake without ice for 30 seconds
  4. add ice and shake until chilled
  5. strain into a Martini or coupe glass
