UP CLOSE: We meet the cheesecake maker with a real soft spot for Sandbach

A booming cheesecake business owner has revealed why she has become Sandbach Nub News' latest sponsor.

Jenni Grist, owner of Rainbow Cheesecakes, has a real soft spot for the town as it's where her dream business began.

The talented cheesecake maker started life on a table inside Sandbach Market Hall.

A year later, she moved to a bigger unit in the indoor market, where the business still is, before opening a shop in Crewe.

But Jenni says she will remain loyal to her Sandbach base, which has built up a dedicated customer following.

"I started during lockdown, making cheesecakes for family and friends and then someone suggested I went to Sandbach Market Hall," said mother-of-two Jenni.

"I took a table but then the unit came up so I took that as it's bigger. We've gone from strength to strength and have a very loyal following in Sandbach."

Jenni, who now makes her products in the kitchen of her Crewe shop in Bramhall Road, says Sandbach customers have definite favourites.

"The Baileys cheesecake is popular along with the lemon meringue one," says Jenni.

"I will always be in Sandbach as that's where I started the business and it's such a wonderful town."

These days, Jenni's products are so popular that she is often up working on the cheesecakes until midnight.

"I do sometimes put the children to bed then head back to the shop to work on orders.

"I just love making cheesecakes. I just don't know what it is about them," said Jenni, who makes around 60 cheesecakes a day.

Jenni has scoured different recipes and combined different ones to come up with her winning recipes.

She uses double cream, soft cheese, icing sugar and digestive biscuits but the actual recipe is closely guarded secret for Jenni.

"I take commissions alongside my other work and will make a cheesecake to a customer's requirements," said Jenni.

So popular are her cheesecakes that customers now order specific ones for birthdays and other special v of sunshine to customers.

"I chose the name and logo as it was used during lockdown and I wanted something bright and happy," said Jenni.

Rainbow Cheesecakes & Sweet Treats is inside Sandbach Market Hall on Thursdays, Fridays and Saturdays.
