Couple behind Holmes Chapel's The Bottle Bank are expanding

Hope Collis and Jacob Thrasher who run The Bottle Bank in Holmes Chapel have taken over another unit in Cheshire.

They are planning to turn a unit in Bollington near Macclesfield into Coupe, a neighbourhood bar and café serving up fine wines, craft beers, cocktails and coffee while bring a 'fresh approach' to casual dining.

Jacob said: "Hope has long dreamt of opening her own space, and we couldn't be more excited to see that dream come to life together here in Bollington. Our ethos is where quality and community come together.

"We aim to source much of our drink selection from local distilleries and breweries in Cheshire, along with artisan coffee and fine wine."

Hope and Jacob have been together since they were 17 years old.

Now 30 and married, the pair have spent the last seven years running The Bottle Bank, a craft beer and wine bar in their hometown of Holmes Chapel.

Jacob said: "Like Holmes Chapel, we were drawn to the strong sense of community within such a beautiful setting.

"The premise is located in a beautiful location looking out onto the village green."

TAPA served its final customers on Friday, September 12.

Jacob added: "Hope has been going out to TAPA for dinner for many years and always had a great experience whilst in there."
